How to make red Nigerian stew?

Hi, I'm trying to work out how the Nigerian stew, one that is red and fat that you eat with rice milled make. I just had to go, and I added tons (like a quater of a bottle) of oil to try and give that lovely greasy she has, and to make the tomato bake down and taste good, but it turned out pretty gross, tasted like oil: X I'm stumped on how to make the stew, and the only other thing I can think of is that my mother always used for chicken, goat or cow to stop. Does cooking the tomatoes with ground meat or stock which gives it the "grease"? Also, how many tablespoons of oil in your stew?
