Cooking Apples – Today’s Diabetic Recipe: Deep Dish Apple Pie

Pull up a chair and get ready for Today’s Diabetic Recipe.Today we are featuring an all time favorite Deep Dish Apple Pie.

Did you know that the apple tree originated in Western Asia?

There are now over 750 varieties of apples.

As far as apples for eating some people prefer sweet such as the Red Delicious and others prefer tart such as the Granny Smith.

Now for today’s diabetic recipe.

DEEP DISH APPLE PIE

Sugar substitute to equal 1/3 c. sugar

1 tbsp. cornstarch

1/2 tsp. grated lemon rind

2 1/2 tsp. lemon juice

1/4 tsp. nutmeg

1/2 tsp. cinnamon

4 sm. apples, sliced

1 c. all purpose flour, sifted

1 tsp. salt

1/4 c. reduced calorie margarine

3 tbsp. cold water

Combine sugar substitute, cornstarch, lemon rind, lemon juice, nutmeg, cinnamon, and apple slices. Place in 9 inch deep dish pie plate on baking dish; set aside. Combine flour and salt; cut in margarine until mixture resembles cornmeal. Blend in water with fork until all dry ingredients are moistened. Shape dough into a ball. Roll out dough on floured surface, and place on top of apple filling. Bake at 425 degrees for 35 minutes or until brown. Cut in 8 equal slices and serve. Yields 8 servings. Amount 1/8 of pie.

Exchange: 1 1/2 bread, 1/2 fat.

MACARONI AND CHEESE

1 1/2 c. skim milk

1 1/2 tbsp. all purpose flour

1 1/2 tbsp. reduce calorie margarine

1/2 tsp. salt

3/4 c. grated low-fat American cheese

2 c. macaroni, cooked and drained

1/4 c. bread crumbs

Combine milk, flour, margarine, and salt to make a white sauce. Return sauce to low heat. Add grated cheese, stirring constantly. Cook until cheese has melted and sauce boils. Remove from heat. Alternate layers of macaroni and cheese sauce in non-stick baking dish; cover with bread crumbs. Bake at 375 degrees until mixture bubble and crumbs brown. 6 servings. Amount 1/2 cup.

Exchange: 1 bread, 1 medium-fat meat.

OATMEAL COOKIES

1 1/2 c. all purpose flour

1 1/2 c. reg. oatmeal, uncooked

Sugar substitute to equal 1/2 c. sugar

1/2 tsp. baking soda

1/4 tsp. salt

3/4 c. reduced calories margarine, softened

3 tbsp. cold water

Combine all ingredients except margarine and water. Cut margarine into dry mixture with pastry blender or knife; blend until mixture resembles coarse meal. Sprinkle cold water over surface; stir with fork until moistened. Roll dough to 1/4 inch thickness on waxed paper. Cut into 24 round or squares. Place cookies on non-stick cookie sheet. Bake at 350 degrees for 15 minutes. Yields 24 cookies. Amount 1 cookie.

Exchange: 1 bread.

what are good ideas for a one year olds lunch?

My daughter will be 1 in about 2 weeks, and has decided she is done with baby food once and for all. Right now she eats basically whatever we do for dinner, but I wanted some more lunch ideas to offer more variety. She eats pieces of whole wheat bread, pieces of bananas, apples, peaches, or other fruit, and bits of cooked carrots peas, beans and such. Sometimes she will also get some shredded lunch meat, with cheese and bread ( like a disassembled sandwich). But I would like some other ideas as well. Is it too early to give peanut butter? What do your babies eat for lunch, or any meal for that matter? Thanks for sharing!

I am having the same issue with my 11 month old. I want to give her nutritious meals but getting stuck for ideas. Usually I give her pieces of chicken breast, some veggies, cheese, cook some plain or veggie pasta, those little breton crackers..she just loves them! Yogurt is another favorite. Egg is another idea…lots of protein. You can give her peanut butter if you like but make sure it is thinly spread on a cracker etc. It still poses a choking issue at this age since it is so sticky. I have also bought some of those little meals specifically for toddlers from Gerber I think. She likes em ok but there is a fair bit of sodium in them.
I haven’t eaten so healthy in my life as I have since I found out I was pregnant lol Good luck with more ideas.

How to Select a Fresh Apple:

When you select an apple for eating raw you will want one that is ripe with full rich color and no discoloration or mushy spots.  The apples with the deepest, fullest color are the most ripe.  If you are selecting an apple for baking, older apples that are slightly over ripe can be used.

Look for blemishes, discoloration, and soft areas on the skin of the apple to determine its ripeness.  Apples become brown and mushy as they pass ripeness.  Firm apples give the best crunch and are the freshest.

Check the weight of the apple.  The heavier the apple is, the more moisture the apple contains.  The moister it is the crisper and fresher it is.  Fresh, crisp, moist apples are what you want when eating an apple.

The shape of an apple can also help to determine how sweet it will taste.  Round shaped apples, of the green variety, are typically younger when picked from the tree and tend to have more flavor than elongated apples.  These are great for eating raw but when cooked can sometimes taste bitter and too firm.

Other Apple Tips:

This edible fruit can be stored in the refrigerator sometimes for up to 3 weeks; some varieties can be stored even longer.  If the apples will be baked they can remain at room temperature for a couple of days.

Edible fruit sitting on the table in fruit arrangements looks beautiful but will deteriorate and rot quickly.  Storing fruit in the refrigerator is a much better way to keep them fresh.

For the freshest apples buy apples when they are in season.  If it is not apple season where you live then the apples in your market have been shipped in from somewhere else and will not be as fresh.

Visit local apple farms or farmers markets to buy locally grown fresh apples.

Granny Smith Apples, Golden Delicious, and Jonathan are good apple varieties for baking.

Green apples that are turning yellowish are past their ripeness.

Green apples are good for strong bones and teeth as well as aiding in vision.  Green apples also have cancer preventing properties.

Yellow apples are good for the heart, eyes, and immune system as well as reducing the risks of some types of cancer.

Red apples are good for the heart, memory, urinary tract system, and reduce the risk of some cancers.

Apples are also known for helping asthma, lowering cholesterol, preventing Alzheimer’s, helping to manage diabetes, and aiding in weight loss.

Always wash apples before eating them.  Many apple trees are sprayed with pesticides and other chemicals that can be harmful if eaten.

If you aren’t sure about your favorite variety of apples try a new variety each time you go to the store.  There are well over 1000 different varieties of apples to choose from, you don’t have to settle for one that you don’t love.  Be adventurous and enjoy your edible fruit!

can you suggest bland foods to my diet ?

I am recovering well from my bout with bleeding GI ulcer using my wife’s diet of chicken/potato soup
and Jello ,drinking Apple Juice —but would like to add other items for variety that are bland but
tasty/ appreciate your help —(96 yr.old American male in Philippines my cook is used to spicy
