Australian Cooking – Pavlova Recipe From The Australians And New Zealanders

Australians and New Zealanders maintain an ongoing “controversy” over who concocted the famous Pavlova.  The Aussies lay claim to it but the Kiwis think very differently.  Each claim it as one of their national dishes.  Firstly, how do you pronounce the word Pavlova.  Here we go: pav-LOH-vuh with the emphasis on the LOH part of the word.

The word Pavlova is taken directly from the name of the famous ballerina, Anna Pavlova.  There is no argument about that fact. Anna Pavlova visited Australia in 1926 and then came back again in 1929 visiting New Zealand as well on this second visit.  She was billed as the greatest dancer of all time.  As can be imagined, she was very light on her toes.

Back at that time there was a very creative chef working in the kitchens of the Esplanade Hotel in Perth, Western Australia.  To celebrate the visit of Anna Pavlova he created a meringue-style dessert which was very light and airy.  His delightful dessert was considered to be lighter than air, just like Anna’s performances were.  Consequently his invention was called a Pavlova – that is the Australian version of how the Pavlova got it’s name.

Now the Kiwis debate the fact that an Australian invented the dessert.  They say it was being made in New Zealand as far back as 1919, although it was not called a Pavlova. The chef in Perth included a small amount of vinegar in his recipe and it is the vinegar which gives the meringue its soft marshmallow centre.  It seems the New Zealand version lacked vinegar in the recipe. The dispute continues but that is enough debate for me….

Let me tell you more about the Pavlova and then you can make one yourself.  It certainly has the appearance of a very large meringue, measuring as much as 9″ to12″ in diameter.  Pavlovas can stand anything up to 3″ in height.  They consist mainly of egg whites and sugar and they are cooked very slowly in the oven.  When they have cooled they are topped with whipped cream and then very colourful fruits are arranged on the top of the cream. The whole creation is quite spectacular and most usually quite rich and sweet.  There are several variations of the Pavlova recipe.  I use this one:

Ingredients

4 egg whites,
1 teaspoon vanilla,
1 teaspoon white vinegar (or lemon juice),
1 cup of caster sugar,
1 cup whipped cream,
Fruit to decorate

Method

Line a baking tray with foil or baking paper.  On the foil or paper draw a circle with a 22 cm (9″) diameter.  In a glass or china bowl beat egg whites, vanilla and vinegar (or lemon juice) until soft peaks form.  Gradually beat in the sugar, one tablespoonful at a time.  When sugar is fully dissolved into egg mixture pile it onto the baking tray, keeping the mixture within the circle.  Smooth the top but leave a slight hollow in the central area.

Bake at 120 degrees centigrade (250 degrees fahrenheit) for approximately 1 and 1/4 hours.   When cooked, the Pavlova should be a very light beige colour.  Turn off the oven.  Leave Pavlova to cool in the oven.

When cold, top with whipped cream and decorate with fruit.  Colourful fruits are good to decorate Pavlovas, ideas being sliced banana, strawberries, kiwi fruit and passion fruit.  Passion fruit is particularly nice, in my opinion, as its tartness complements the sweet Pavlova so well.

If you are making the Pavlova in advance then store it in a cool dry place, not in the fridge and then decorate just before serving.

Do you have any tips or hints on how to cook like an Italian?

I recently attended a cooking class by an Italian-Australian and one tip he told me was to cook the tomato sauce together with olive oil (as opposed to putting in the olive oil in after the tomato sauce is cooked). This helps in fusing the olive oil with the tomato sauce.

I was wondering if anyone has any other tips on cooking Italian or Mediterranean food?

I am italian, I can help!!
For perfect tomato sauce you need to follow these 3 steps. These 3 steps are of absolutely capital importance, as they are valid for every variation of tomato sauce, and they are the ‘base’ for it.

First of all, ingredients: use San Marzano canned tomatoes. They are a type of Roma tomatoes: http://en.wikipedia.org/wiki/San_Marzano_tomato.
You can find them in most italian grocieries. It’s better to get them canned, the ones you get at the groceries are harvested when they’re not fully ripened yet and they ripe during the trip to the grocery. The canned ones are canned right at the field, at the right ripening stage.
Second, use extra virgin olive oil.
Third: Onions!! The first thing you should do is chop an onion (roughly for every 2 cans of tomatoes), and fry it over medium heat with olive oil, till it turns yellow-transparent (don’t let it brown!!). Just then, add the blended tomatoes from the can, bring it to a boil over medium heat then let it simmer over low heat, partially covered. There’s a chemical reason why the onions are necessary: tomatoes are acidic (sour), so the onions (which are chemically basic) will neutralize the acidity resulting in a much smoother and pleasant sauce.

This is for the base sauce…you can then add vegetables, or olives, or whatever your imagination suggests!!

Australian has some of the world’s best local Seafood. Curtis Stone cooked Oprah a BBQ Seafood delight on Whitehaven Beach, Hamilton Island.

Oprah is a name known across the world. She represents strength, beauty and character. During her Australian Tour late 2010, she attracted many well known celebrities to promote Australia and all it has to offer.

Curtis Stone, a well known Australian Chef joined Oprah on Hamilton Island, Whitehaven Beach cooking a beach BBQ and seafood delight for almost 100 guests. Hamilton Island is a beautiful and glamorous Queensland destination, with the best of Queensland Seafood Produce. Together they enjoyed a fun afternoon on the beach with friends and great food.

If you have seen the footage, you will have seen a purpose built ice bar and a diverse and abundant range of local Seafood; king prawns, oysters, lobster, red claw crayfish and lobster. This really set my tastebuds is overdrive with the quality, presentation and appreciation that went into cooking with fresh local produce.

In reality, it really does take a team of experts to organise and coordinate a spectacle of this proportion. For most of us around the world, we don’t need such extravagance. We simply want to buy and cook great seafood for us and our friends and family. Unfortunately we all can’t have a personal chef like Curtis Stone.

If you are having your own weekend getaway or a party at home, you can wow your guests with a beautiful meal including fresh prawns, oysters and fish. Buying fresh will save you time and money, and may not even require you to do any cooking!

Condiments and sauces are a great idea when serving seafood. They give such a great presentation and really give the visual appeal. Lemons and limes give a great colour when next to prawns, and look fabulous when placed on ice; so simple, yet so effective.

A beautiful sauce will finish off your seafood; try a homemade Seafood Sauce or homemade Mayonnaise with a touch of lemon, tomato sauce and Worcestershire Sauce. Cream can be substituted with mayonnaise if you prefer. Once you have learnt how to make Mayonnaise you may buy it again, as it offers such a rich thick creamy taste and texture.

Ive asked this before but WHERE in America, would you recommend an Australian AU Pair go, to see the most etc?

It sounds like you are posting an advertisement for California! Florida is nice too, I live here, but it is more of a retirement state than California. Florida also has alot mroe religious lifestyles, as opposed to California which is alot more liberal and openminded so to speak. If you come to Florida however, you may want to look somewhere Coastal, maybe West Coast. I’m actually an East Coast girl, but the West Coast of Florida is so much better. Either California or Florida will probably allow you to see the most for what you want. Try to stay out of the bigger cities to stay in, visiting them is fine, but I all I can say, is don’t stay in Orlando, FL. Its way too crazy to live, fun to visit, but not to live in.
