Bok Choy Chicken Soup – Chinese Night at Home
A good and fun idea for family meal night is Chinese food. Yes, it’s one of the few “ethnic” foods that’s a little more expensive to make at home than to buy at the restaurant, but the price is well outweighed by the quality of the food at home, as well as the sense of pride that comes with making something at home.
Sweet and Sour Sauce
It’s a dipper. It’s a sauce. It’s the most recognized condiment in the Asian food world. Use it for eggrolls or mix with virtually any meat for an entrée.
Ingredients
1/3 cup white vinegar
1 cup water
1/8 tsp salt
3/4 cup sugar
1/8 tsp Tabasco sauce
1/8 tsp white pepper
1/2 tsp Worcestershire sauce
2 tbsp cornstarch
3 tbsp ketchup
1/2 tbsp minced ginger
1 tbsp olive oil
Directions
In a sauce pan, combine 2 cups of water, white vinegar, sugar, salt, white pepper and Tabasco sauce. Bring to a boil.
In a bowl, mix cornstarch, 2 tbsp water and Worcestershire sauce. Add to boiling mixture and stir constantly until thickened.
Remove from the stove and add ketchup, ginger, and olive oil. Mix well and refrigerate immediately.
Stir Fry
Stir fry has become more or less a catch-all for the American family. It’s convenient and fast, so it’s perfect for mom or dad on the go. With so many variations it’s also easier to accommodate people’s individual tastes.
Ingredients
1/3 cup soy sauce or favorite stir-fry sauce
1/2 tsp ground ginger
1/2 tsp garlic powder
vegetable oil
2 tsp dark sesame oil
1 lb boneless skinless chicken breast, cut into bite-size pieces
1 lb mixed vegetables to taste.
Directions
Combine stir-fry sauce, ginger, and garlic powder in a small bowl, se to the side. In a large nonstick skillet add oil, and place over medium-high heat until hot. Add chicken, and stir-fry until chicken is done. Once cooked, remove chicken from the skillet. Add vegetables to skillet and cook. Re-add the chicken and sauce mix. Cook over medium heat until everything is hot. Remove and serve over rice.

Ingredients
10 thinly sliced of bok choy leaves (Chinese cabbage, regular cabbage will do in a pinch)
3 1/2 cups of chicken broth
2 tsp soy sauce
2 tsp of sesame oil
5-6 red pepper flakes
1 garlic clove well chopped
Directions
In a medium sauce pan, bring chicken broth to a boil. Add soy sauce, sesame oil, pepper flakes and garlic clove. Next add the leaves of bok choy or cabbage. Simmer until cabbage is tender. In the case of bok choy cabbage, it will turn a nice green when done. For regular cabbage cook al Dante.

Instructions
Wash and separate pak choi
Roughly chop garlic
Mix corn flour in 2 tbsp of water in a small bowl
Heat oil in a wok, then add the garlic
Once garlic has lightly browned add pak choi
Add oyster sauce and stir fry for 2 mins
Add water and cover for 5 mins
Finally add corn flour mixture.
Mix well over heat until sauce thickens and serve.
Notes
Pak choi may be substituted with other Chinese vegetables like kai lan or choi sum or even a western vegetable like broccoli. Please note however, that cooking times may vary.

Easy Ways to Cook Vegetarian Meals
Cooking vegetarian meals doesn’t have to be intimidating! There are a lot of easy ways to go about doing things. To get started and get yourself really used to doings thing focus on trying to make simple vegetable based meals so that you can get used to cooking vegetarian. Don’t just think about replacements for things, instead focus on vegetarian foods. One of the most time consuming, difficult, and frustrating parts of cooking healthy meals, vegetarian or otherwise, is dealing with the food prep. All of the ideas here will become much easier if you use a food processor to do your food preparations. This will handle the dicing, slicing, grinding, pureeing, mincing, and everything else for meals.
It’s often easiest to start out with one pot meals and then work on making dishes with multiple components later.
For a very literal one pot meal, try making some great soups. One of the key differences here when making a vegetarian soup is to remember to use a vegetable broth, not a meat based one. If you have a food processor you can throw in your ingredients to be diced, like potatoes, carrots, and broccoli. It’s easy to find vegetarian minestrone, chowders, and stews to make easy to cook and delicious meals.
Stir fries are the fall back of the vegetarian diet! Whenever you don’t know what to eat, it’s very simple to go about throwing a bunch of vegetables in for a great stir fry. You can use tofu cubes or edamame for some protein here. Again, if you have a food processor, use it to chop up some of your favorite vegetables, like peppers, broccoli, carrots, snow peas, asparagus, bok choy, zucchini, or onions. Whatever you like goes! You can make your own sauce fairly easily or buy one at the store, or pour all of this onto some rice or noodles.
Don’t just stick to salads, but they are a great way to mix up what you’re eating and make a very easy meal.
Wraps are another great way to get a lot of nutrients into your food! This is also another great food where you can customize the ingredients to your mood at the time. Try using hummus for a spread, some lettuce, olives, red pepper strips, zucchini, shredded carrots, onions, asparagus, and whatever else you desire.
These are just a few of the many options available to you for great easy to cook vegetarian meal ideas. It doesn’t have to be hard, and you don’t have to feel deprived, to eat a vegetable based diet. Always experiment and mix things up so you don’t get tired of what you’re eating, and to keep your diet full of different nutrients.

Vegetarian Cooking – Three Basics
For any of the many reasons people choose to eat vegetarian food – religion, politics, finances, or health – one thing in common is that everyone prefers food that tastes delicious and provides good nutrition. There are some basic techniques to vegetarian cooking which will accomplish that.
There is a range of vegetarianism. From the vegan to the person who eats meat on rare occasions. Some people consider themselves basically vegetarian if they never eat red meat, but do eat fish and chicken once in a while.
Other vegetarians eat animal products like eggs and dairy, but never the animal itself. A vegan is at the far end of the continuum, rejecting animal products entirely. Vegans won’t eat mayonnaise because it’s made using eggs, for example.
Wherever you are on the continuum of vegetarianism, you want your food to taste good, be satisfying, and provide good nutrition. Here are some methods for cooking vegetarian to meet those basic requirements.
To begin, if you are making some dish that is actually a meat-based recipe, such as chili con carne, stop substituting textured vegetable protein for the meat and leaving the rest of the recipe unaltered. The result never tastes quite right, and you’ve been robbed of the pleasure of good food: it’s neither meat nor properly vegetarian. Furthermore, you haven’t gained in terms of health or economy. Soy is the primary ingredient of textured vegetable protein, tofu, and tempeh. These are usually high in fat, high in processing, and fairly high in cost. Not much better than organically raised meat, if at all. So if chili con carne is what you want, buy organic meat and enjoy it! Otherwise, cook a delicious soup using red beans that doesn’t pretend it’s chili con carne.
The key to good vegetarian soup is to use oil. Even if you prefer low fat, your body does require fats for healthy metabolism. And it definitely enhances the quality and flavor of any vegetarian soup when some of the vegetables (onions in particular) are saut~ed. Use an oil that’s liquid at room temperature, such as olive, vegetable, or grape seed.
The next critical ingredient of vegetarian food that tastes fabulous is really simple: use sea salt. Although any kind of salt will enhance the flavor of most foods, sea salt is best. It naturally contains minerals, while it doesn’t contain the nasty chemicals of regular processed table salt. Important to note~ use salt *during* the cooking instead of waiting until after serving the food. This makes a difference in the final quality of the dish because cooking is chemistry. Remember back to your high school chemistry classes: the order of combining the elements, and the application of heat to the mixture could make a tremendous difference to the results of the experiment!
The third tip for vegetarian cooking is obvious, yet needs emphasis. Use lots of vegetables! You can’t over-do vegetables in your diet – the greater the range and color, the better. Use leafy veg (lettuce, spinach, and chard), root veg (yams, carrots, potatoes, turnips), and the stems and seed carriers of veg (for example celery, eggplant, peppers, zucchini). Buy organic veg if you can because they really do taste better, and of course they provide better nutrition because they are gown in healthy, ‘clean’ dirt.

and this dinner is for three ppl and a baby(19 Months) so its gonna have to be appeatising to him too
make a mixed green salad out the the pok choi, tomatoes and other veggies. pan fry the pork (cut into thin strips first). while frying add a little seasoning (i use mrs dash) and a few squirts of soy sauce. when done, place the pork on the bed of greens and enjoy. maybe some rice on the side.
