Recipe for a Diabetic Friendly Meal of Ham, Black Beans, and Rice

Bring a little Cuban flair to your family’s dinner table with this delicious meal of Ham and Black Beans served over hot rice. This recipe can be enjoyed as a meal or you can add other items for a more elaborate meal. This is a diabetic friendly recipe so you can serve this meal to anyone without worry. As a diabetic myself, I know it is important to be careful with how you use rice. The ham and beans in this recipe make the use of rice okay. As always, for diabetics, it is better to use brown rice.

HAM, BLACK BEANS, RICE

1 pkg (16 oz) dried black beans

6 cups cold water

1 med green bell pepper

1/4 cup chopped onion, divided

Sort and wash the beans. In a large Dutch oven combine the washed beans, water, bell pepper, and 2 tablespoons of the onion. Add the cold water and leave to soak over night.

4 cups cold water

2 cloves garlic, minced

1/2 tsp oregano

1/4 tsp cumin

3 tbsp white vinegar

1 tsp salt

8-oz cooked ham in small cubes

3 cups hot cooked rice (brown is best for diabetics)

To the soaked beans add the 4 cups of water, cover and bring to a boil. Reduce heat to low and simmer mixture for 2 1/2 hours or until the beans become tender.

In a small bowl combine the remaining two tablespoons of onion, garlic, oregano, and cumin. Using a fork, mash the mixture then stir in the vinegar. Add this mixture and the salt to the beans. Stir to mix in well. Add the cooked ham and simmer the mixture, uncovered, for another 20 minutes. Serve over hot cooked rice (preferably brown rice).

How much chipped ham should I use in ham BBQ if cooking for 9 to 11 people?

There will be about 9 or 11 people coming to my house tomorrow, I was going to make chipped ham barbecue in the crock pot. How many pounds of shipped ham should I use for that many people? Is there a chart/guide somewhere?

1/2 – 3/4 pound (cooked weight) per person – figuring normal people and side dishes. This will leave some extra, but will ensure people who want them can have seconds. Have a great BBQ!

Cajun Cooking for Non-Cajuns

If a Cajun saying perhaps, 'no buddy is perfect. "No need to be ashamed of your non-Cajun heritage, but not required to go through life without good food, either. Jokes aside, Cajun food offers so much in the way of flavors and texture that is recognized as one of the most unique cuisines in the world and is very much part of Americana cooking. Here are some of the Cajun favorites:

Jambalaya

E-ahh! There are tons of "just add meat" boxed dinners out there for this Cajun dish. Not that person. You can taste authentic Jambalaya in under one hour with very little effort, really. "And the smells!

Ingredients
1 pound peeled and deveined shrimp
1 / 3 pond and cooked ground chicken
1 / 3 lb sliced ​​sausage
1 / 3 lb cubed cooked ham
3 tablespoons olive oil
2 chopped white onions
2 cups chicken stock
1 (14.5 oz) can diced tomatoes
1 chopped bell pepper
1 / 2 cup diced celery
3 cloves garlic chopped
1 cup uncooked rice
1 / 2 teaspoon Tabasco
1 / 4 teaspoon thyme
A bay leaf
1 / 4 teaspoon pepper
3 / 4 teaspoon salt

Directions:
Cook the onions, peppers, celery and garlic in two tablespoons of the oil in a pan until the onions are slightly translucent. Add the shrimp and cook until the shrimp are pink but not dry. Remove from heat and set aside.

In separate pan, add ½ teaspoon of oil to the dry rice and brown rice, make sure not to burn. Stir in broth, tomatoes, salt, pepper, thyme, Tabasco and bay leaf.

Heat to a boil, then cover and turn the reduce heat to a boil. Simmer about 15-20 minutes or until rice is tender.

Stir the shrimp and all of the meat. Cover and cook until heated through. Remove bay leaf, and impress yourself.

Calas

Okay this is not something you'll probably find anywhere, but in a Cajun kitchen. Nobody knows why it never struck, Calas but is certainly a traditional Cajun treat. Serve to your guests as a dessert, they are sure to be impressed by your knowledge of Southern culture!

Ingredients
6 tablespoons flour
2 tablespoons baking powder
3 tablespoons sugar
powdered sugar
1 / 4 teaspoon salt
2 cups cooked rice
1 / 4 teaspoon vanilla
1 pinch nutmeg
2 eggs
vegetable oil (for frying)

Directions:
Mix the dry ingredients: flour, sugar, baking powder, salt, nutmeg and vanilla. In a separate bowl, mix rice and eggs.

Add the dry ingredients to the rice and eggs and mix thoroughly. Drop by spoonfuls into a pan with hot vegetable oil (about 360 degrees F) and bake brown. Be very careful when doing this! Drain on a paper towel. Sprinkle with powdered sugar. Best served hot.

This gets you through a full meal and should pretty much let your family and friends filled, but somehow wanting more.

I'm a ham in cola cook together, how long should I cook it for?

I am a 3 kg boneless ham in cola cook together, how long a time convenient to cook the joint. I will cook in a large soup pot type, with cover if needed.
