Sicilian cooking has been represented fairly well by Chefs Batali and Bastianich, but Sardinian and Palestinian cooking are less explored.

Moroccan cooking has made it’s appearances now and then, but is still underrepresented, definitely a cuisine I’d like to see more of in the near future. The spices and ingredients are exotic and unique – like raisins or figs in Mediterranean couscous. I’d like to see more use of the tagine – very unique cooking vessel.
