Question about cooking artichoke hearts and turkey burgers?

1. In general, when cooking meat, what causes that, for lack of a better word, loose skin type stuff (like dead skin falling off, rubbery stuff) on meat (esp burgers) when you cook it and is there any way I can avoid getting it.
2. I have artichokes hearts in a can I was going to make pizza with. Can i just boil them? Or will they be bad? And do they usually have a pineapply sweet scent (they were in citric acid)?
