Cooking of The Middle East
‘Middle eastern cuisine’ is a broad term that encompasses many different cooking styles from a number of different countries. Moroccan, Syrian, Greek, Arabian – the various cuisines of the middle east share a great deal – and have many differences.
Middle Eastern cooking is a celebration of life. No matter which country, the staples are the fresh fruits and vegetables that grow in the hills. The spices and flavorings of Middle Eastern cooking are those that awaken the senses, sparkling against the thicker, richer tastes of the main ingredients. Mints, lemon, garlic, rosemary – all have a fresh, astringent quality that cleanses the palate and refreshes the taste buds. Throughout the region, the cuisine varies – but these things remain the same: fresh ingredients, astringent and piquant spices, olive oil, and little meat.
Lebanese
The tiny country – about the size of Connecticut – is nestled into the shores of the Mediterranean Sea, at the very crook of the fertile Crescent. Its contributions to the cuisine of the entire Middle Eastern region of the world are unmistakable. The flavors that spice the foods of all the surrounding lands can be found here in abundance – olive oil, lemon, garlic and mint. Lebanese cuisine features such staples as kibbeh (ground lamb with bulghur wheat) and tabouleh (parsley, mint and bulghur wheat salad). The food is simply prepared, with the flavors blending together into a complex medley of earthy, fruity tastes and scents.
Syrian
If Syria had contributed nothing else to the world cuisine but pita bread and hummus, it would still be worthy of note. There’s far more to the cuisine of this small Middle Eastern country, though. Baba ganoush (pureed eggplant), stuffed olives and figs, peppers in olive oil – Syrian cooking celebrates the fruits of the earth and blends them to bring out the textures and flavors in surprising ways. Shish kebab and rice pilaf are two of the more well-known dishes, and while most people think of Greece when they hear baklava, the Syrian claim that it is based on their own dessert of batwala.
Arabian
The Bedouin of the desert once based their diets on dates and yoghurt with the occasional camel or goat to provide meat. Over the centuries, the nomadic tribes incorporated spices, meats and vegetables from other cultures into their cuisine. Today’s Arabian cuisine is a mingling of influences from India, Lebanon and further west. Lamb is the meat most often used in cooking, and it is prepared in a number of ways including shish kebab, spit-roasted, or stewed. The cuisine relies heavily on mint, turmeric, saffron, garlic and sesame. Rice and kasha are the most commonly consumed grains, and the spicing is fresh and astringent – meant to awaken and refresh the palate rather than burn it out.
Throughout the Mediterranean Middle East, the cultures and people have intermingled and carried with them their foods and traditions of eating. In no other place in the world can there be found a blending of cultures that has mingled so much – yet maintained such distinct, national flavors. Healthful, fresh, delicious and life-enhancing, it’s little wonder that the cuisine of the Middle East is among the most popular with diners the world over.

I have a project for school where I have to study Jordan and bring in some type of food from there. I’m a vegetarian so if the recipe had no meat that would be great. Any deserts or pastries that are quick and easy to make? Thanks!

I grew up with this kind of food, mainly from friends at home, I would like to be able cook and makluba mansaff (without the box) and knafi and w'arat'dawali ,…. and spehia … and guthiyath .. oh these are my comfort foods … strange but if I do not Palestinian or Jordanian … Hmmmmm
Maklouba is a dish traditionally made for parties or for welcoming visitors or relatives who have been away. Maklouba is Arabic for his head, then serving, the pot is turned over to the meat ingredients to finish on top of rice. Starting 8 Ingredients 2 lbs. meat (ground lamb or beef) 2 lbs. rice 2 cups cauliflower 6 large carrots Salt and pepper Instructions 1) Cook the meat flavor and let the broth. Keep the broth and set aside. 2) Cook the cauliflower and carrots and add them to the top of the cooked meat. 3) Leave the rice in warm water for 15 minutes. 4) Pour the rice and add it to the top of the cauliflower / carrot / meat. 5) Add the beef bouillon 6 cups water to it. Pour the mixture on top. 6) simmer until rice is tender (about 20 minutes). 7) Turn the pot upside down on a bowl and season to taste with salt and pepper.
Fry in oil and sprinkle pine nuts on top. Serve with yogurt and cucumber / tomato salad. ************************************************** ******************** Mansaf: Ingredients: 4 pounds lamb 1 kg Whey margarine 2 pounds of pine nuts and almonds Baked Egyptian Rice Recipe: – 1 – Whey is washed and soaked in water one hour, then mashed with the blender Moulinex, then dried out. 2 – Meat is washed in a tray and soaked in water 3 – Onion (chopped in squares) is added, then meat is boiled before cooking. 4 – Meat is removed and the soup is taken. 5 – whey juice is mixed with the soup and left to cook, the are bound with cornstarch as desired. 6 – Meat is added and is kept on fire until soup and meat well cooked. 7 – Rice is cooked, and then two or three Arabic bread in the tray. 8 – Rice is put on the bread pyramidically, then pieces of meat are arranged on the surface. 9 – Mansaf is decorated with pine nuts and almonds. 10 – Mansaf served with hot whey juice and sprayed on mansaf as desired. **************************************… Chicken Mansaf Ingredients: 1 whole chicken, cut into serving pieces 1 1 / 2 quarts yogurt 1 egg 1 cup almonds, toasted fresh 1 / 2 cup pine nuts, freshly roasted to taste, parsley, finely chopped to taste, salt to taste, pepper 6 servings long grain white rice (like basmati) 4 to 6 servings Directions Place chicken in a large pot with enough salted water until barely cover. Cook over medium heat until almost tender, about 3 / 4 hours. In a separate pan cook enough rice for 6 large servings. In a large saucepan, stir yogurt until it is very slippery. Add lightly beaten egg and heat over medium heat, stirring constantly. Add enough of the liquid from the cooked chicken to sauce to thin, the consistency of very heavy cream. Heat until it is almost to a boil and thickens slightly. Add the cooked chicken to the yogurt sauce and finish cooking the chicken in the sauce at a low temperature. On a large platter, mound the rice in the middle. Arrange the chicken pieces on rice and pour most of the yogurt sauce, reserving the remaining sauce to add as desired by the dinners. Garnish with almonds, pine nuts and parsley around the edges of the mound of rice and chicken. Serve hot accompanied by warm pita bread. Helpful hints: Can also be made with lamb instead of, or in combination with chicken. SelfPerceived Needs of Adult Jordanian Patients in ICU $130.64 The primary purpose of this study was to identify the selfperceived needs of adult Jordanian family members who have a family member admitted to an intensive care unit (ICU). The second purpose was to explore whether or not the identified needs were being met, and third, to investigate who were the most likely persons, identified by the family members, to meet those needs. This descriptive, exploratory study was based on crisis theory (Aguilera Messick, 1982) with a convenience sample of 139 family members of 85 critically ill patients. Family members completed two instruments: the Critical Care Family Needs Inventory (CCFNI), and the Needs Met Inventory (NMI) version2. In addition, family members completed a Demographic Data Questionnaire. The 10 most important needs identified by adult Jordanian family members were under the assurance and information subscales with a mean score of at least 3.59. The need to be assured that the best care possible is being given to the patient under the assurance subscale had the highest mean score of 3.97 on the CCFNI. The 10 least important needs were under the support and comfort subscales.
