We canned pickled beets without cooking them — is there a danger?

My wife’s from Eastern Europe, where they don’t follow such stringent rules about home canning as we do in the USA. She pickled up a bunch of beets in vinegar-salt-sugar mixture, without cooking them, and in used jars from the grocery store (not special canning jars with “approved” lids). She covered them in cold water, set it to boil, and timed it 5 minutes after the water started boiling steadily, then turned off the heat for them to cool. I said all the info I found on the internet said you have to cook beets first (even among the pickled beet recipes not one could I find with such little heat and time). She said her mother did it that way for years and years, and her cousin cans almost a hundred jars a year this way. I’m worried about botulism. The jars all sealed OK, and the tops will pop out if the vacuum seal is lost so we know. But am I right to worry? What’s the worst that could happen? If the seal is OK, will there be no problem with the contents?

The problem with using mayo jars instead of mason jars is that the glass is thinner, and weaker, and there’s a greater chance that it’ll break when you process it.

The problems with reusing lids is that they usually don’t seal, and they are weaker, so you don’t know how good the vacuum is.

Boiling for only 5 minutes, you didn’t get the core of the contents up to temperature, so there’s a greater risk of spoilage. Normally, one puts the jars into and out of the boiling water, though, instead of putting them in cold water, raising the temperature to boil, and then leaving them in the water, while waiting for the water to cool, so maybe the core temperature got up there after all.

And in any case, vinegar, with lots of salt and sugar, should be a pretty good preservative.

The worst that could happen is that you will die. I wouldn’t recommend that anyone else follow your wife’s procedure, but if there’s a vacuum when you go to open them, you’re *probably* going to be OK eating the pickled beets.
