Three Traditional German Recipes

German cuisine has become very popular not only in Europe, but all over the world. Most of their food is comprised of beef, poultry, fish, or pork—pork being the most popular choice of meat. Most German foods are not spicy, although mustard is an extremely popular condiment for sausages (the form in which most of their meat is prepared). Roasted meat and stews are also very popular ways to prepare meat. In this article, I have included three of my favorite traditional German recipes. I hope you enjoy them as much as I do!

Kielbasa and Sauerkraut

Ingredients:
6 apples (peeled, cored, and chopped)
2 lbs kielbasa sausage (sliced)
1/4 cup brown sugar
1 (32 oz) package sauerkraut

Directions:
In a large skillet, heat the apples and sauerkraut over a medium heat. Let this mixture simmer for about 10 minutes or until the apples have turned soft. Add in the brown sugar and sliced kielbasa and mix well. Cook for an additional five minutes, or until the sausage meat is heated all the way through.

Rye Bread

Ingredients:
3 1/4 cups rye flour
2 1/2 cups bread flour
2 packages active dry yeast
1 tsp salt
2 tbsp sugar
2 tbsp butter
1 1/2 cups lukewarm milk
1/2 cup warm water
1/2 cup molasses

Directions:
In a small bowl, dissolve the yeast in the warm water. In a large bowl, mix together the salt, sugar, and milk. Beat in the molasses, butter, 1 cup of rye flour, and the yeast/water mixture. A blender works best for this part. Mix in the remaining flour using a wooden spoon or plastic baking spatula. Fold in the white flour until the dough begins to stiffen. Knead on a floured surface until the dough is smooth. If the dough is sticky, add flour to it. Cover the dough with a wet towel and let it rise for an hour and a half (or until it has doubled in size). Punch the dough a few times, then divide it in half. Shape each section into a loaf, then place them on a greased cookie sheet to rise again for another hour and a half. Bake at 375 degrees F for about half an hour.

Apple Cake

Ingredients:
4 cups of apples (peeled, cored, and diced)
2 cups sugar
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 cup vegetable oil
1 tsp vanilla extract
2 eggs

Directions:
In a bowl, mix together the eggs and oil until the mixture is creamy. Add in the sugar and the vanilla extract and beat thoroughly. In a large bowl, mix together the flour, baking soda, salt, and cinnamon. Slowly add the egg mixture into this, mixing until well combined. Fold the apples into the mixture. Spread the mixture into a greased 9 x 13 inch baking pan. Bake at 350 degrees F for about 45 minutes. Allow the cake to cool on a wire rack before serving.

Yes I do …… my dad’s family is German and here are two of our family favorites …… it is actually 2 dishes that combine to form one large one ……. will definitely be a hit for your friend from Germany ……. = )

Pork Schnitzel with Chanterelle Mushrooms

2 (3-ounce) pork cutlets, pounded thin
Kosher salt and freshly ground black pepper
All-purpose flour, for dredging
2 eggs, beaten
Breadcrumbs, for dredging
2 tablespoons clarified butter
3 slices smoked bacon, roughly chopped
1/2 onion, diced
1 tablespoon dijon mustard
1 tablespoon capers, drained
Butter
3/4 pounds chanterelle mushrooms, chopped if large
1/4 cup heavy cream

Pat cutlets dry. Season cutlets with salt and pepper, then dredge in flour, then egg, then breadcrumbs. In a large skillet, add clarified butter and saute cutlets on both sides until golden brown and crunchy. Drain on paper towels, keep warm.

In a separate skillet over high heat, cook the bacon and the onions until they both start to brown. Add mustard and capers. Add a small lump of butter to the mix and immediately add the chanterelles. As the mushrooms begin to absorb the butter, add just enough cream to cover the bottom of the pan. Simmer sauce to reduce slightly. Add more mustard or capers as needed.

To serve, spoon sauce over browned schnitzels.

Potato Pancakes

1 large, baking potatoes, like russets, about (8 ounces)
1/2medium onion, (about 4 ounces)
1 egg
1 tablespoon chopped parsley
1 tablespoon flour
1 tablespoon dry bread crumbs
1/4 teaspoon dry thyme
Juice of 1 lemon
Salt and pepper
Oil for pan frying

Using a food processor or a box grater, grate the potato and onion on the large hole into a bowl. Using your hands, squeeze out the excess liquid and place the dry potato onion mixture in a bowl. Add the egg, parsley, flour, breadcrumbs, thyme, lemon juice and seasonings. Mix well. Heat 1/2 cup of oil in a heavy skillet. Add 1/2 cup mounds of potato mixture to the hot oil, and flatten down to a 3/4-inch thick pancake. Turn heat to medium. Cook for 5 minutes on each side, or until crispy and golden.

You can serve the cutlets on top or beside the potato pancakes along with applesauce ……. they will love it .

The salad can be served warm with bacon dressing. Little variations are always recommended by adding or subtracting the quantity of vinegar as well as sugar according to your desire.

Frankfurters: a special kind of sausage primarily prepared in the city Frankfurt. German frankfurters are cooked with smoked pork and beef and usually served with mustard.

Spatzle: it is a dish which contains small noodles made with flour, eggs, milk and salt and normally cooked in boiling waterThe dish can be served with some flavored sauce or gravy and can be served as a perfect side dish.

Sauerbraten: it is the most renowned and considered to be the national dish of Germany. It is a basically German pot roast, usually beef, which are marinated in a mixture of vinegar, spices and seasonings. You can have the sauerbraten with red cabbage or potato dumplings.

Lebkuchen: it is the popular Christmas German cookie. Lebkuchen is a chewy cookie which is typically flavored with honey, nuts and some spices.

What is a good German recipe that’s not too hard to prepare?

My girlfriend is a German and I would like to try to impress her and cook a German dish myself but I really have never cooked anything German before. What’s something somewhat impressive that I could cook for her?
She’s taken me to some good German restaurants and I thought the food was really good, but I don’t know how to cook it myself to impress her.

Forelle blau mit Kartoffeln und Sahnemeerretich
(trout blue with potatoes and horseradish with whipped cream)

trouts: water, 1 onion, a little bit salt, pepper, 2 bay leaves and some uniper berries, a shot of vinegra.
Let cook the water and then add the trouts but don´t let them cook. Keep the temperature just before boiling. Let the trouts simmer for 15 min.

Cook potatoes and peel them, put them in a bowle an put some chopped dill over them.

mince horseradish and add some drops of lemmon juice, whipp cream and and sweeten it. Then mix horseradish and cream carefully.

Melt some butter for the potatoes.

Serve with a riesling. And don´t forget the candles!!!
