The methods of cooking with moist heat, ie by means of water, boiling, simmering, steaming, dry steaming, and braising. In each of these processes, the effect of moist heat to food is entirely different from that of dry heat. However, the method to be selected depends very much on the amount of water that the food contains. For some foods much water should be added in the cooking process, for others, only a little or none. If food does not placed immediately in small or large amounts of water, is cooked by contact with steam or a utensil which is heated by placing in boiling water with one another, such as a double boiler.

If water is such an important factor in cooking with moist heat, something about the nature and use must be understood. Therefore, before consider the moist heat cooking process in detail, the role of water in the body and in the kitchen and the types of water are discussed.

Function of water in the body .– Water supplies no energy to the body, but it plays a key role in the diet. In fact, the specific function in the body to act as a solvent and a carrier of nutrition and waste material. In doing this work, keep the fluids of the body properly diluted, increases the flow of digestive juices, and helps you to lose runoff. However, its ability to perform these vital functions properly depends on the quality and safety.

Types of Water .– Water is hard or soft. If the falls from the clouds, it is pure and soft until it comes into contact with gases and solids that are fixed by him and change his character. The lime beaten down day after day, clinging to the sides of the ship where the water is boiled, and over time they become very thick-coated. Permanent hardness is caused by other calcium compounds that are not beaten down by boiling water. The only way to soften water is to add an alkali such as borax, soda or soda bicarbonate.

Use of water in the kitchen .– It is the solvent, or dissolving the force of the water that makes it useful in cooking liquid, but the two types, soft water is preferable to Hard as it possesses higher resolution. This is due to the fact that hard water has a certain amount of dissolved material and will therefore dissolve less of the food substances and taste when used for cooking purposes than soft water, that nothing has been resolved. It is known that the taste of these drinks as tea and coffee is often strongly affected by the use of hard water. Dried beans and peas, grains, and tough pieces of meat will not cook tender so easily in hard water as in soft, but the addition of a small amount of soda during the cooking of these foods will help to soften them.

Water is used in cooking especially for the extraction of flavor, as in making coffee, tea and soup, as a medium for the implementation of flavors in foods and beverages such as lemonade and cocoa, for the relief of both plant and animal fiber, and starch for cooking and solve sugar, salt, gelatin, etc. In many accomplishment of this work, the water acts as a medium for transporting heat.

I’ve looked a few recipes on the Web, but I was just to see if anyone has any favorites with tofu? Good to get used to and like tofu? What kind should I buy tofu?
