I was to cook her something nice for mother's day, but I have no idea what to make her that isn't exactly "special" with chicken and veggies. Any ideas?

1) Take boneless, skinless chix breast
2) Butterfly them, season with salt & pepper
3) Take some baby spinach, and saute it with a bit of minced onions, and some garlic
4) Cool the spinach, and stuff the chix breast with the sauteed spinach, then put a slice of either baby swiss, manchego, or provolone cheese
5) Bake in 375F oven for 30 min
6) Remove and rest 5 min
7) Serve with either coconut / ginger rice, or sauteed brussel sprouts

Coconut Rice
1) Take either basmati or jasmine rice (1.5 Cups) washed
2) 1 can coconut milk
3) 1 knob of ginger (minced)
4) place rice in pan, pour coconut milk over, add ginger and enough water to bring liquid up to the first knuckle of your index finger when it just touches the top of the rice add salt to taste
5) Bring to a boil, cover and simmer until rice is cooked
6) Fluff with fork enjoy

Sauteed Brussel Sprouts
1) Steam brussel sprouts until just tender
2) Heat some butter in a saute pan, sweat yellow onion, add garlic and saute a bit
3) Add steamed brussel sprouts, and saute till heated and coated with onions and garlic
4) Season to taste and enjoy
