The best eats across perak, from the rustic town of teluk intan to the state capital ipoh and the ever peaceful taiping. Starting the day,
bring an empty stomach to the lively hawker stalls- some of which have been around for decades - flanking jalan maharani, near the town's main wet market.popular local favourites include lai fun(a thick, vermicelli-like rice noodle in wholesome chicken soup or curry) at the lai fun peng stall; lor mai fan ( fragrant sticky rice with a variety of currie and a special side dish of sweet desiccated coconut) and pan mee (hand-made flat noodles in a hearty broth topped with crunchy anchovies). The latter in commonly found nationwide, but this small town version boasts of a naturally sweet and well-flavoured stock.
Alternatively, grab a table at teck kee foodstuff enterprise(37 jalan raja) and try a variety of quick-seve fried noodles, tong sui(sweet broth), or its trademark nyonya kuih(tradition food)

Malaysian Satays

Ingredients

  • 1/2-pound skinless chicken thighs or beef flank steak, cut into 1-inch strips
  • 2 stalks lemongrass, smashed and coarsely chopped
  • 1 red onion, quartered
  • 1 cup corn oil
  • 1 (1-inch) piece fresh ginger, finely chopped
  • 1 tablespoon ground turmeric
  • 1 tablespoon ground cumin
  • 1 tablespoon coarse black pepper
  • 1 teaspoon kosher salt
  • 6 tablespoons sugar
  • Peanut Sauce, recipe follows
  • Rice cakes, for serving
  • Sliced cucumbers, for garnish
  • Cubed onions, for garnish

Directions

Put the chicken or beef pieces in a mixing bowl. Add the lemongrass, onion, oil, ginger, and spices and seasonings. Cover and marinate in the refrigerator for about 3 hours.

Heat a grill, preferably charcoal, to medium-high. Meanwhile, remove chicken or beef from marinade and skewer (if using wooden skewers, be sure to soak them for 30 minutes prior to using). Grill for 3 to 5 minutes or until cooked through, turning halfway through.

Serve with Peanut Sauce and rice cakes and garnish with cucumber and onion.

Peanut Sauce:

  • 3 tablespoons corn oil
  • 1 white onion, finely chopped
  • 1 teaspoon shrimp paste
  • 1 teaspoon ground turmeric
  • 1 stalk lemongrass, smashed
  • 4 small dried red chiles, crumbled
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 6 tablespoons granulated sugar
  • 1 tablespoon kosher salt
  • 2 cups roasted peanuts, roughly chopped

Heat the oil in a large skillet over medium heat. Add the onion, shrimp paste, turmeric, lemongrass, and chiles. Stir to combine and cook over medium heat until fragrant and onion is soft. Add coconut milk and water and bring to a boil. Add sugar, salt, and peanuts. Stir constantly over medium heat and simmer until the sauce thickens. Remove the lemongrass stalk and serve warm or at room temperature.

A Malaysian Cuisine Adventure

When I first went to a Malaysian restaurant I was ten and from that moment on it was my food of choice. I was hooked. All my friends decided that I was crazy visiting the same restaurant every weekend, sometimes on my own. But the mix of spice and simple Chinese food was simple yet complex, the sheer juxtaposition of food types made me wonder about the country itself. I was determined to visit the home of my favourite food.

Most of my friends thought that my obsession with the Asian food had gone far enough, but one had faith. My friend Tanya decided that although my mission was born out of a love of spicy pancakes, she was going to accompany me on my wild and albeit slightly deranged adventure. So we planned our trip down to the last minute and to her credit Tanya was just as excited as I was in the end.

The morning of our departure, we were nervous, but with maps, tickets and passports in hand we took flight. In the air looking down below at the country which had inspired the whole trip, we reflected on our journey. From a ten-year-old fussy eater to the grown woman sat on the plane excited about the cuisine that was waiting in on the ground below. The journey we had taken had been born out of sheer lunacy, but we were bound to have an amazing time.

When we landed in Kuala Lumpur I was tired and wanted to get to the hotel as quickly as possible, but then during the taxi journey to the hotel I saw all the delicious culinary delights that were on offer. From that moment on I was determined to visit all the street stalls and the small local restaurants dotted around the capital.

After a short nap we left the hotel and headed to the centre, the jostling atmosphere made us both come alive. The atmosphere was so alien to our own, but at the same time I felt as if I had come home for the first time.

A mixture of Malay, Chinese and Indian culture, the country reflects the world of today, a true mix of people, flavour and diversity.

On our journey of food discovery we encountered many tastes, people and customs. The best times were spent observing the people of the region, jostling down crowded streets and cooking a delightful mix of meats, spices and flavours. The street stall owners cook incredible meals from their memories, recipes that have been passed down by generations, altered and adapted by the varying cultures fluctuating in the area.

The rest of my trip was a blur of historical sites, food and more food. We travelled through the country listening purely to our stomachs and their needs. We came back several pounds heavier, but our hearts and souls were cleansed, leaving our minds lighter and at ease.

Malaysian Cooking introduces the art of using Malaysia's most aromatic cooking ingredients to prepare food with wonderful fragrances to excite both the palate and sense of smell. Since three quarters of what we taste comes from smell, the aromas produced by our food are vitally important to the enjoyment that comes from eating. Inspired by fond memories of fragrant cooking from her childhood days, author Carol Selva Rajah has included in this book a collection of new and traditional Malaysian dishes for anyone wishing to serve the best flavors of Malaysian food at home.

The Food and Cooking of Malaysia and Singapore

The Food and Cooking of Malaysia and Singapore

$23.09

The history of Malaysia and the Singapore peninsula involves the coming together of many peoples, and this is reflected in the region's exciting food, a medley of fiery and sweet spices, fresh ingredients and flavours from China, India, Thailand and Japan, to name only a few. The region is proud of its distinct localized cooking styles and flavours, such as those of Penang or Sarawak, and of the different groups of settlers, such as the Nonya. Singapore has been a self-contained nation since 1965 and has an exciting urban lifestyle, which has led to an emphasis on quick, fresh food from hawkers. Lining the city streets are rows of stalls, selling noodles, Indian and Chinese dishes, European-style cakes, Indian breads and a plethora of vegetarian and seafood specialities. The authors explore the culture and history of the regions, as well as describing the cooking equipment, techniques and ingredients used in Malaysia and Singapore. An understanding of the region leads to a greater appreciation of its cuisine and the way that textures, flavours and ingredients work together. The authors focus on using ingredients that are available in Asian food markets, such as the essential flavours of sweet garangal and kaffir lime leaves, and exotic fruits and vegetables. In the main section of the book, 150 classic, famous and popular recipes have been carefully assembled. The dishes are organised into chapters covering the different elements of Malaysian and Singapore eating - street snacks, fragrant soups, delicious meat, fish and vegetarian main courses, fresh and flavoursome side dishes, red-hot relishes and cooling desserts. Choose among this fabulous menu to try glorious coconut and lemon grass-infused Singapore laksa, rich Malay lamb korma, aromatic grilled tamarind prawns, East-West fusion dishes such as sweet and sour deep-fried squid or sesame prawn toasts, local signature dishes such as Singapore chilli crab, steamed ginger custards, mango lassi and other cool, refreshing drinks, and fiery pickles, from the red hot sambal belacan to crunchy, sweet Nonya acar.
