What is the process and equipment needed to prepare, cook, keep warm and enchiladas in a restaurant kitchen?
I am opening a Tex Mex restaurant. I have many years experience in restaurants and have cooked almost everything except enchiladas. I’m looking for some experienced advice on necessary equipment and cooking / company / heating process of enchiladas in a commercial restaurant kitchen from start to finish. Thanks!
I would use half or full 2 “hotel pans and keep them in either a steam table or alt-Sham. But if you want a better presentation, I would use 8 boats “and” casserole dishes called “nuke to warm and workmanship the salamander or oven. I use the boat now and make them to order. I use a steamer or Insta-Fresh tortilla press to soften the tortillas, fill them in the boat top with sauce and cheese before putting it in the salamander. If you frozen chips, portion them into the fryer can handle bags. Otherwise when you cook the leaves in a rush and when the matter it refreezes it will be a solid ball. I am from the regular bulk tortillas and cut them into quarters and it is much cheaper but a bit more work. I reuse the bags of fresh save half of what I cut, so I have one pound fryer-ready bags handy. I started with avocados, but it’s a nightmare to manage them with price swings and maturity they are when they come in. I now frozen pulp in 5 lbs bags to use and they have long enough where there is very little waste. At $ 3 per pound, it’s worth it. The citric acid helps them add prevent them from browning.
On the table by the chef-cook kitchens Their house is not occupied as their restaurants, but chefs make their space their own kitchens may not be as busy as their restaurants, but these chefs make the space their own.
